Sazón is a Mediterranean tapas bar and grill on Jalan Pantai Batu Bolong, opened in 2025 and led by chef Andrew Walsh, whose Singapore restaurant CURE held a Michelin star. Bali-born executive sous chef Putu Gede (Tude) works alongside him. The menu is built for sharing: grilled flatbreads, citrus-dressed seafood, slow-cooked meats, fire-roasted vegetables and paella. Guests can book a paella masterclass most evenings. The bar serves house sangrias, gin and tonics, vermouth, mezcal and other agave spirits. Dinner runs from 6pm every day except Tuesday, with a Saturday lunch from noon. It suits groups and couples who want a lively, cocktail-led dinner in central Canggu.
