Kubu at Mandapa

Kubu is the signature restaurant of Mandapa, a Ritz-Carlton Reserve, in Kedewatan just outside Ubud. The bamboo pavilion sits beside the Ayung River and seats 52, including nine woven private cocoons on the riverbank. Chef Eka cooks multi-course tasting menus built on Balinese and Indonesian ingredients foraged and sourced within 100 kilometres, with a zero-waste, root-to-leaf approach. The Kubu Experience features dishes such as Payangan beans braised with kelp garum fermented for over a year, while the vegetarian Root to Leaf menu costs IDR 1,150,000++ per person. Seasonal wine-pairing dinners are held through the year. It suits special-occasion dinners and couples. It opens daily 5:30 PM to 11 PM, reservations are recommended, and the dress code is smart casual with no singlets or flip-flops.
