We’re always curious about the people shaping Bali’s dining scene, and Chef Salman Pathan is one to watch. Now at Padma Resort Legian as the resort’s new Executive Pastry Chef, he brings more than 16 years of experience across luxury hotels and Michelin-starred kitchens in the Middle East and Japan.

Most recently part of Sézanne at Four Seasons Hotel Tokyo, the three-Michelin-starred restaurant, Chef Salman has now made Bali his home. What caught our attention is how he plans to bring his French pastry background together with the island’s ingredients, from Kintamani coffee and tropical fruits to local chocolate and fresh herbs.

Meet Chef Salman Pathan

Originally from South Goa, India, Chef Salman Pathan began his pastry career in 2010 and has since worked across some of the world’s leading luxury hotels. His career includes roles with St. Regis, Anantara, Six Senses and Four Seasons across Qatar, Oman, Kuwait and Japan.

Most recently, he was Pastry Chef at Sézanne at Four Seasons Hotel Tokyo, the three-Michelin-starred restaurant. With 16 years of experience behind him, Chef Salman brings a strong French pastry foundation and an international perspective to his new role at Padma Resort Legian.

French Pastry Meets Bali’s Flavours

For Chef Salman, pastry is all about the balance between precision and creativity. His approach combines classic French techniques with seasonal ingredients, creating desserts that feel refined without losing their flavour.

Bali is now becoming part of that story. Chef Salman plans to work with local ingredients including Kintamani coffee, tropical fruits, fresh herbs and single-origin chocolate, bringing the flavours of the island into future creations at Padma Resort Legian.

What’s New at Padma Resort Legian

Chef Salman has already started putting his stamp on Padma Resort Legian’s newly launched Bali Heritage Afternoon Tea, refining the sweet selection with French pastry techniques and local flavours. It’s an early look at how his international experience is shaping the resort’s pastry programme.

Another highlight is his signature French Éclair, which received a Gold Medal at HORECA Kuwait 2023. At Padma Resort Legian, the award-winning pastry will be reimagined with a Balinese twist, pairing Chef Salman’s French pastry background with the flavours of his new home.

Our Take

What caught our attention is the combination of Chef Salman’s French pastry background and Bali’s abundance of local produce. With Kintamani coffee, tropical fruits, fresh herbs and single-origin chocolate in the mix, Padma Resort Legian’s pastry programme has an interesting new direction to follow.
